Healthy tiramisu pancakes

Tiramisu Pancakes

Serves 4

Macro breakdown (per serve): 288 cal | Protein: 11.5g | Fat: 16.6g | Carbs: 22.8g

1/3 cup buckwheat flour
1/3 cup cashew meal (or sesame meal to make nut free)
1/4 cup cacao powder
1 tbsp mesquite powder
1 tsp vanilla bean powder
2 tsp baking powder
1/4 tsp cinnamon
1/4 tsp Himalayan salt
3 organic eggs, separated
1 ripe banana
1/4 cup cold dripped coffee
1/4 cup coconut milk
1 tsp coconut oil, to cook

Coffee sauce

3 tbsp cold dripped coffee
2 tbsp smooth cashew butter
1 tbsp cacao
1/2 tbsp coconut nectar
1 tbsp boiling water, add according to desired consistency

Coconut yoghurt, to serve


  1. Combine all dry pancake ingredients in a large mixing bowl
  2. Then combine egg yolks, banana, coffee and coconut milk in a blender. Blend until smooth
  3. Transfer to the dry mixture and mix well 
  4. Beat egg whites until firm peaks form and gently fold into the mixture 
  5. Place pancake mix in the fridge while you make the coffee-chocolate sauce
  6. For the sauce, simply combine all ingredients in a small mixing bowl and mix until well combined
  7. Place coconut oil in a non-stick pan and allow to melt over low-medium heat 
  8. Add a small amount of the pancake mixture and leave to cook for 1-2 minutes (or until bubbles start to form) 
  9. Flip and allow the other side to cook for another minute or so
  10. Repeat this process for the rest of the mixture and simultaneously warm the sauce over the stove on low-heat
  11. Spread coconut yoghurt between the pancakes (optional) and drizzle with sauce
  12. Serve and enjoy

*To make your own cold dripped coffee, place 1/2 cup organic ground coffee in a jar and add 1 cup filtered water. Place a lid on the jar and leave in the fridge overnight (at least 12 hours). Then strain the coffee through filter paper or a fine strainer to make your coffee concentrate. This will be more than required for the recipe.
